Ingredient Japanese salmon curry noodle soup Recipe

  • 2 tablespoons olive oil
  • 1 brown onion, cut into thin wedges
  • 1 carrot, peeled, cut into noodles using a spiraliser
  • 1L (4 cups) Massel Organic Chicken-style Stock
  • 4 (about 180g) skinless salmon fillets
  • 1 tablespoon dark soy sauce
  • 440g packet shelf-fresh udon noodles
  • 1 bunch baby buk choy, halved
  • 92g packet mild S&B Golden Curry Sauce Mix, broken into pieces
  • 2 green shallots, thinly sliced
  • Sesame seeds, toasted, to serve

How To Do Japanese salmon curry noodle soup Recipe

Method

  • Step 1
    Heat 1 tablespoon oil in a large saucepan over high heat. Add onion and carrot. Cook, stirring occasionally, for 3 minutes or until onion is soft. Add stock and 1L (4 cups) water. Cover. Bring to boil. Reduce heat to medium. Simmer for 5 minutes or until carrot is just tender. Use tongs to place carrot in a bowl.
  • Step 2
    Meanwhile, place salmon in a shallow dish. Rub all over with 3 teaspoon soy sauce. Heat remaining oil in a large non-stick frying pan over medium-high heat. Cook salmon for 3 minutes each side or until just cooked through. Transfer to a plate. Cover to keep warm.
  • Step 3
    Place noodles in a heatproof bowl. Cover with boiling water. Set aside for 2 minutes to heat through. Drain.
  • Step 4
    Add buk choy and curry mix to stock mixture. Stir for 1 minute or until curry mix dissolves. Stir in remaining soy sauce and season.
  • Step 5
    Divide noodles, buk choy and soup among serving bowls. Top with salmon and carrot. Sprinkle with shallot and sesame to serve.
