200g cherry tomatoes
2 garlic cloves, finely chopped
2 teaspoons chopped fresh thyme leaves
115g (1/2 cup) dried risoni pasta
250ml (1 cup) chicken stock
300ml Bulla Cooking Cream
110g (2/3 cup) frozen peas
50g baby spinach leaves
Chopped fresh parsley to serve, optional

Step 1Heat the oil in a large deep–sided frying pan over high heat. Season the tenderloins and cook for 1-2 minutes each side or until golden. Transfer to a plate. Set aside.
Step 2Add the cherry tomatoes, to the pan. Cook, stirring, 2-3 minutes or until tomatoes tart to blister. Transfer to a plate. Add the garlic and thyme to the pan and stir gently for 30 seconds or until aromatic. Add the risoni and stir to coat. Add the stock and bring to boil. Reduce heat to low. Cover and simmer for 10 minutes.
Step 3Stir the cream and the peas into the risoni mixture. Return the chicken to the pan with the spinach leaves. Cover and cook for 3-4 minutes or until the chicken is warmed through and spinach has wilted. Divide among serving plates. Top with the tomatoes and scatter over the parsley, if using.
